Gelling agent-Phytagel® or Agargellan®. The gelling agents are generally made of agar, processed from sea plants, and/or Gellan gum, processed from bacteria. The Gellan gum is used in a lower amount and is usually clear, making it easier to evaluate plants in jars. It is not always the best for plants so agar mixes such as Agargellan provide a middle ground. Agar is available in several types as well. Published recipes will often specify the ideal gelling agent.
